Mrs. Md Nor’s study was undertaken to demonstrate the potential use of pumpkin as an ingredient in expanded snack foods processing. Various aspects of formulations, processing conditions of extruder, nutritional value, physical characteristics and consumers’ acceptance of the product were explored. In view of its natural desirable colour, flavour, sweetness and health benefits, this research has the potential to diversify the application of pumpkin and offer new uses for pumpkin in the food industry. Moreover, it will increase returns to pumpkin growers, agriculture sectors, and offer a high value snack foods vegetable - based to the consumers.
