My research specialty is the area of meat science, meat production, animal nutrition and animal science. My previous research has investigated the influence of forage diets on meat flavour and the development of muscle characteristics that influence the sensory and nutritional quality of beef . Current research explores the influence of on-farm factors such as the animal's diet, gender, growth rate, age and genetics on both carcass composition and meat quality characteristics of beef and lamb. My research programme covers a range of animal production systems for the production of meat (from chicken, pork, venison to beef and lamb). A key topic of my research is the utilisation of calves of dairy origin for beef production in dairy-beef systems.

Project Title: Defining the connection between pasture and plate: Innovative herbage mixtures to grow lambs for meat quality

In order to create a more sustainable meat industry in New Zealand there has been a shift towards a value-chain approach for meat production which includes careful consideration of the consumer needs and development of products that fit the consumer's criteria for quality. It has been identified that consumers want a high quality product but also a product of consistent quality. To-date the majority of the research in the area of meat quality has considered the effects of treatments that occur after the animals have left the farm. Given the need to have a clearer understanding of what causes variability in meat quality the objective of this work is to understand the contribution of on-farm factors of diet, growth rate and season on meat quality.

Project Title: Nutritional priming of innate immunity

The immune system of young sheep, cattle and other ruminants contains unusually large numbers of gamma-delta ( ) T lymphocytes. The T cells localise within mucosal surfaces of all species, particularly in the gastrointestinal tract. The aim of this study was to determine if condensed tannins from plants that can be eaten by grazing animals are able to prime T cells from both calves and lambs in a similar manner to that reported for apple peel CT with bovine cells in overseas research. A positive outcome would suggest that natural dietary components for grazing animals may directly prime innate immune cells residing in the intestinal wall therefore, up-regulating the immune system as a mechanism to increase the hardiness of animals in grazing systems against gastro-intestinal parasites.
